Beetroot is the main ingredient of borsh, which is one of the traditional dishes of Eastern Europe. It is a tasty soup, made in many variations, but with the unmistakable color given by beets. Borsh can be made with pork, chicken, veal, vegetables, potatoes, legumes, paprika, dill.
