Chifei de patate or kipferli, are a very tasty and quick dish, good to be combined with meat or vegetables. It is an Austrian recipe that originally accompanied gòlash and meat sauces.
POTATO KIPFERLI
Potato chifei or kipferl or kiefel, is a quick dish, a modern fast food, or a side dish to meats. It can be used not only in the savory version (which I propose here), but also in the sweet one (whose use has almost disappeared).
The salty recipe is, however, used in almost every family in the area bordering the Austrian and Slovenian territory. It is a tasty recipe, very easy to prepare.
Ingredients for 4 people
1 kg of potatoes
250 grams of flour
50 grams of butter
1 egg yolk
Proceed to boil the water, cook the potatoes.
Once cooked, peel them and mash them while still hot with a potato masher.
Add salt.
Let them cool, add the butter and egg yolk. With the flour quickly form a soft dough that you will roll in the form of cylinders not too large.
Cut out pieces of about 10 cm and fold them into a crescent shape.
Proceed to fry in oil not too hot until they take a golden color.
Salt and serve hot
