5/6 heads of red radicchio di treviso
200 g of grated grana cheese
10 g 00 ( double zero) flour or corn flour or gluten-free flour
extra virgin olive oil
salt and pepper to taste

Wash, wash and cut radicchio into strips.
In a bowl, beat the eggs, grana cheese, a pinch of salt and pepper.
Add the radicchio and stir.
In another pan, preferably nonstick, put a drizzle of extra virgin olive oil, pour the mixture you have prepared ( spread the mixture well that it fills the entire top of the pan)
Let the omelet congeal on one side, turn it over to the other side with the help of a plate or lid, and then cook it on the other side. Be careful not to burn.
