SPINACH OMELETTE IN THE PAN
What is the difference between frittata and omelette?
Frittata is cooked on both sides while omelette needs to remain creamier and therefore is cooked only at the base, leaving the heart soft. Frittata can be cooked in a pan with little oil or in the oven, while omelette should be cooked in butter.
INGREDIENTS FOR A HEALTHY SPINACH OMELET
8 eggs, 200 g ricotta cheese, 50 g grated grana cheese, 1 kg spinach, salt pepper, nutmeg, extra virgin olive oil, nutmeg.
Clean the spinach, wash it several times ( cold water)
Prepare a frying pan, a drizzle of extra virgin olive oil, proceed to drain the spinach that you have cleaned and washed, and cut and sauté it.
Saute them, pepper them, and let them cook.
In a separate bowl beat the eggs ( yolk and egg white together, not only all yolk ), add the grated grana cheese, salt and pepper, at the end also add nutmeg.
In the same bowl add the ricotta and spinach and mix well.
In the meantime take the frying pan, a drizzle of extra virgin olive oil, the pan leave it on the fire, but pay attention to the oil that should not boil.
Pour the mixture and let it cook in the pan, or – baked spinach frittata version – the mixture in a baking dish and then the same bake it in the hot oven at 180 degrees for about 25 to 30 minutes
