Turkey triestina recipe: a simple and tasty recipe.
Clean the turkey well, remove the innards, neck and head. Make a cut and insert to taste the herbs, herbs you prefer ( some lard or bacon cut into small pieces ).
Put it in a saucepan with some carrot, celery, onion ( which you have first cut into small pieces ) and three or four cloves . Sauté for about twenty minutes ( or less, adjust according to the amount). Add vegetable broth, thus obtaining a gravy with which you will bathe the turkey during cooking.
Lay the turkey in a casserole dish, which you buttered a little beforehand so that the turkey and the gravy you prepared do not stick together.
Cook the turkey slowly in the oven at 180 degrees ( check the cooking time, 30 to 40 minutes depending on the size) and moisten occasionally with a little brandy.
When the turkey is cooked, place it on a serving platter and serve it by pouring over the gravy that you have sifted to exclude any residual lard, onion, carrot and celery.
