INGREDIENTS FOR 4 people
500 g of stale white bread
0.5 l whole milk
100 g of raw ham (if you prefer a hint of smoke, use Sauris ham)
200 g smoked ricotta
250 g white flour type 00
2 eggs
black peppercorns (if desired)
In a bowl, place the stale bread cut into pieces. Pour in the milk and let it soak for half an hour. In a large bowl, place the coarsely chopped prosciutto, 60 g of grated smoked ricotta and the bread soaked in milk (previously squeezed).
Incorporate the flour and eggs, then gently stir until the mixture is smooth. Let stand for at least half an hour.
Proceed to prepare the gnocchetti according to the traditional technique, giving them the shape and coarseness you most desire.
In the meantime, boil the water and add salt. When it boils, gently throw in the water yours gnocchi and wait for them to rise to the surface.
The gnocchi should be seasoned with melted butter, smoked ricotta cheese that will be grated over the gnocchi, along with the pieces of ham that are left over from the dough with a light sprinkling of black pepper.
